Let’s start with a one-of-a-kind holiday dish that uses Rocky Mountain Soda and will have your guests clamoring for seconds.
Oven Roasted BBQ Chicken
This delectable barbequed chicken dish will be one of the culinary highlights of your holiday season. And best of all you won’t have to venture out onto the frozen deck to fire up the grill! The secret to this recipe’s success is all in the sauce, which contains a cup of our vegan Colorado Cola. Whether served with the rest of your Thanksgiving fare or as a standalone meal with some potato salad, baked beans, or fries on the side this Oven Roasted BBQ Chicken is sure to be a hit. (Note: you will need a programmable multi-cooker to execute the recipe.)
Ingredients (serves 4, scale up as needed)

In a small saucepan over medium-high heat combine the ketchup, chiles in adobo sauce, paprika, cumin, 1 teaspoon of salt, and half of the Colorado Cola. Stir often for approximately 10 minutes until the sauce is slightly thickened. Reduce heat and stir in the vinegar, then remove from heat.
In a small bowl combine the garlic powder, black pepper, and the remaining salt. Mix thoroughly. Add this seasoning to your chicken pieces as evenly as possible. Then line a baking sheet with aluminum foil, coat the foil with the cooking spray, and set it aside.
Pour the water and the other 1/2 cup of Colorado Cola into the programmable multi-cooker. Then add the seasoned chicken to the cooker and pour half of your barbeque sauce mix (from the small frying pan) over the chicken. Do NOT stir the chicken in the pot.
At this point preheat your oven to broil.
Back to the cooker. Cover the cooker and lock the lid in place. Set the steam release handle to the sealing position. Then set the manual/pressure cook setting to high for 10 minutes. Note that the chicken won’t be ready in 10 minutes because it will take 10 or 15 minutes for the cooker to reach high pressure. So the chicken will be ready 10 minutes from when it reaches high pressure.
When the cooking has stopped, vent all of the steam. Only then remove the lid, and then carefully remove the pieces of chicken and place them on the baking sheet you set aside earlier. Put the remainder of the barbeque sauce from the small frying pan over the chicken pieces on the baking sheet and then place it in the oven for approximately 5 minutes until the skin is slightly crispy. Remove and enjoy!
